JERK CHICKEN

INGREDIENTS

  • 1 chicken broken down into maryland cuts
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1 teaspoon szechuan pepper
  • 1 teaspoon allspice
  • 1 teaspoon palm sugar
  • 1 lime juiced
  • 2 cloves garlic crushed
  • 2 shallots diced
  • 1 drizzle of oil

METHODS

  • Step 1 into a plastic bag combine, thyme, cumin, szechuan pepper, allspice and palm sugar. Add the garlic, lime juice, oil and shallots with the chicken marylands. Set aside to marinade for around 4 hours minimum.
  • Step 2 Place the chicken onto the ozpig grill plate and turn a couple of times to brown and cover. Cook around 25 minutes.
