for the caramel sauce:

  • ¾ cup brown sugar
  • 2 tablespoons double cream
  • ½ cup walnuts
  • Salt to taste

for the pancakes:

  • 2 cups self raising flour
  • 1 teaspoon bi carbonate of soda
  • 1 cup milk
  • 1 cup cream
  • 1 egg
  • 50 grams melted butter
  • 1 tablespoon sugar

for the smashed bananas:

  • 2 bananas, chopped or crushed
  • 1 tub mascarpone
  • 1 tablespoon icing sugar


  • Step 1: To make the caramel sauce, melt the butter in a pan over a high heat on top of the Oz Pig, then caramelize (melt) the brown sugar. Add cream and walnuts mixing through the sugar mix. Move pan to the warming plate and, when cooled, add salt to taste.
  • Step 2: Add all of the ingredients for the pancakes to a bowl and whisk thoroughly. The mixture should resemble the consistency of thickened cream – add a little milk if it’s too thick. Heat a large frying pan on top of the Oz Pig. Add enough batter to make a pancake. Flip the pancake when bubbles appear. Continue making pancakes until the batter is all cooked.
  • Step 3: Stir icing sugar through mascarpone and stir through bananas. To serve, stack the pancakes, add a good serve of smashed bananas and drizzle with caramel sauce.
