ROTISSERIE CHICKEN

INGREDIENTS

STUFFING

  • 3 x cups bread crumbs
  • 1 x Onion, finely chopped
  • Salt & Pepper

GARLIC BUTTER

  • 150g Butter
  • 5 x Cloves of finely diced garlic
  • 1 x Handful of finely chopped parsley
  • Salt & Pepper
  • 2 x Small chickens or 1 x medium chicken
  • Salt & Pepper

METHODS

  • Combine 150g butter, garlic, parsley and salt and pepper together and set a aside
    Combine stuffing ingredients together in a bowl and bring together. This can be done ahead of time at home and taken to camp in a clip-lock bag.
  • Add stuffing to the chicken cavity, taking care to fill it completely.
  • Using your finger, separate the chicken skin from the breast, and stuff with garlic butter.
  • Season your chicken generously with salt and pepper and put your chicken on the rotisserie skewer, taking care to fix it firmly so that it doesn’t spin on the skewer
  • Cook over a low heat for roughly an hour or until chickens are crispy and golden on the outside and serve!
