JERK CHICKEN
INGREDIENTS
- 1 chicken broken down into maryland cuts
 - 1 teaspoon thyme
 - 1 teaspoon cumin
 - 1 teaspoon szechuan pepper
 - 1 teaspoon allspice
 - 1 teaspoon palm sugar
 - 1 lime juiced
 - 2 cloves garlic crushed
 - 2 shallots diced
 - 1 drizzle of oil
 
METHODS
- Step 1 into a plastic bag combine, thyme, cumin, szechuan pepper, allspice and palm sugar. Add the garlic, lime juice, oil and shallots with the chicken marylands. Set aside to marinade for around 4 hours minimum.
 - Step 2 Place the chicken onto the ozpig grill plate and turn a couple of times to brown and cover. Cook around 25 minutes.
